Tempeh skewers with taboule and buns

Skewers are simple, quick and extremely effective. You can skewer any plant matter. We went for the tested vegetable combination with smoked tempeh and coated it with bbq sauce, to the point of total perversion. We reheated the casserole in foil with fresh thyme and olive oil. We spiced up the meal with baby tomatoes, onions and mint. 


INGREDIENTS 

Smoked tempeh 

Mayo

Red peppers

Zucchini 

Young onions

Champignons 

Brown sugar

Bbq ketchup

Tamari sauce

Garlic 

Mint

Fresh thyme

Salt

Pepper 

Buns


METHOD

1. To the skewers we added tempeh and even sliced vegetables in sensible order. We coated it with olive oil. 

    For the taboule, cut the tomatoes and onions into small cubes, add mint, lemon, olive oil and season. 

3. Prepare bbq sauce with sugar, tomato sauce, garlic and fresh thyme. Finally, season to taste. 

4. Cook the skewers on well heated coals, turning them slowly and allow the sugars to caramelise. Turn the skewers patiently, making sure they do not catch fire. 

5. Coat the buns with olive oil and add fresh thyme. Wrap them in foil and bake in hot coals until crisp and fresh. 

6. Slice the buns and add borlotti bean Mayo, tomatoes, onions and finally add the vegetables from the skewers. Enjoy each mouthful somewhere quiet.
