Radicchio salad with Chiko cubes in oil

We are excited by the anticipation of spring. Until then, we enjoy the winter supplies. Mixed salads, picked walnuts, pear, fennel, Chiko cubes in garlic oil, boiled potatoes and French dressing. A salad classic that never disappoints.  


INGREDIENTS FOR THE SALAD

Chiko cubes in oil

Pear

Radicchio

Chinese cabbage

Fennel 

Spinach 

Nuts

Dried tomatoes

Boiled potatoes


DRESSING

Balsamic vinegar

Olive oil

Maple syrup 

Garlic 

Salt

Pepper


METHOD

Boil the potatoes with the skin on and peel them. Wash all the lettuce properly. Slice the pears. 

For the dressing, make an emulsion of balsamic vinegar, olive oil, maple syrup, garlic and finally season to taste. If you have fresh herbs such as parsley, rosemary, lovage, add for freshness. 

Make the salad as you like. You can start with hot potatoes on the bottom, add a salad mix, top with sundried tomatoes, walnuts and chiko cubes. Mix the salad with the dressing at the end.
